Chicken Skewers with Yoghurt Satay Sauce


Please enjoy this specially made Home Style recipe, made with great-tasting Barambah Organics products.

Ingredients

For the Skewers:

  • 500g of chicken thighs, diced into large cubes
  • ¼ cup Barambah All Natural Yoghurt
  • 1 tablespoon of minced ginger
  • 1 minced garlic clove
  • 1 large red chili, sliced
  • ½ teaspoon turmeric
  • ½ bunch of coriander

For the Sauce:

  • 1 cup Barambah’s All Natural Yoghurt
  • ½ cup peanut butter
  • 1 large red chilli
  • 1 teaspoon minced ginger
  • 1 clove crushed garlic
  • 2 tablespoon tamari or soy sauce
  • ½ bunch coriander
  • 3 spring onions
  • Juice and zest of one lime
  • Olive oil

Method

  1. Mix the marinade ingredients together and then mix it through the chicken.Cover and leave in the fridge to marinate overnight
  2. Thread the chicken onto soaked skewers
  3. Heat some olive oil in a griddle pan and char the chicken, continuing to BBQ until cooked through
  4. For the sauce, place all of the ingredients into a blender and blend until smooth - taste the sauce and adjust if required
  5. Top with extra chili and coriander and serve with a wedge of lemon
