Chocolate Strawberry Chia Breakfast Pudding (Lactose Free)

Ingredients

Chocolate for breakfast? This pudding is healthy enough to serve at any time of day but also decadent enough to have as a dessert. It certainly hits the spot for any chocolate cravings. This pudding needs to be made the night before but is best plated up with the berries just before eating. Try using raspberries, figs, blueberries or your favourite seasonal fruit. (This chia pudding works well with any of the Barambah Organic milks)

  • 6 fresh medjool dates
  • ¼ cup cacao
  • 1.5 cups Barambah Organic Lactose free milk
  • ⅓ cup chia seeds
  • 250gm strawberries sliced

Method

  1. Soak dates in hot water until soft (about 5-10 mins). Drain then place in a blender. Add the cacao and blend well with the dates until smooth. Add ¼ cup milk to make a thick paste, then slowly add the remaining milk, scraping down the sides if necessary. Stir through the chia seeds. Tip the chocolate chia milk mix into a bowl, cover and place in the fridge to thicken up, at least 5 hours but preferably overnight.
  2. Just before serving place the sliced strawberries down the sides of the glass jars and spoon in the chocolate chia pudding.

Serves 4
