Savory Spelt Muffins


Please enjoy this specially made Home Style recipe, made with great-tasting Barambah Organics products.

Ingredients

  • ⅓ of a cup of sun-dried tomatoes
  • 2 cups wholemeal spelt flour
  • 1 tsp baking powder
  • ⅓ cup pine nuts
  • 1 zucchini, grated
  • 1 small handful parsley, chopped
  • 1 pinch sea salt
  • cracked pepper
  • 3 rashes of bacon dice & sautéed
  • ½ cup Barambah organics Feta
  • 2 eggs beaten
  • ¼ cup olive oil
  • ½ cup Barambah organics full cream milk

Method

  1. Preheat the oven to 180°C
  2. Dry roast pine nuts in a small pan on the stove. Remove, then sauté bacon in the same pan.
  3. Chop tomatoes into small chunks.
  4. In a large bowl, combine spelt flour, baking powder, roasted pine nuts, grated zucchini, parsley and seasoning.
  5. In a second bowl combine feta, oil, milk, eggs, bacon and chopped tomatoes. Fold dry ingredients into wet and stir to combine.
  6. Spoon into lightly oiled or silicone muffin pan and bake for 30-35 minutes.
