Method
Preheat oven to 180C
Line muffin pan with paper cases
Cream the butter and caster sugar until light and fluffy. Add the eff and vanilla and beat well, then stir in the sour cream to combine completely.
Sift flour and spices together and stir through until combined. Stir in the diced apple.
Spoon the mix into the prepared muffin pans and bake in the preheated oven for 15-20 minutes, or until risen and golden brown. Allow to cool, then dust with icing sugar to serve.
