Blackberry & Cream (Rollup and Whipped Vanilla Cream)

Please enjoy this specially made Fine Dining recipe, made with great-tasting Barambah Organics products.


Blackberry Rollup:

  • 200g blackberries (fresh or frozen)
  • 100g sugar
  • 10g pectin
  • 1 shot cassis liqueur

Whipped Cream:

  • 100ml Barambah Organics Pure Cream
  • 1 vanilla bean scraped


Blackberry Rollup:

  1. Boil blackberries and sugar together until soft then set aside
  2. Add pectin and liqueur and bring back to the boil
  3. Pour onto an oiled flat surface and allow to cool and set

Whipped Cream:

  1. Place both into a bowl and whisk until firm but silky

To finish,

  1. To assemble cut set jelly into squares and place a generous dollop of cream in the centre. Fold one corner to meet the other like a ravioli

We like to finish with a shaving of freeze dried strawberries for that extra strawberry kick or for a more unusual taste, black pepper or Tasmanian native pepper.
