Method
Blackberry Rollup:
- Boil blackberries and sugar together until soft then set aside
- Add pectin and liqueur and bring back to the boil
- Pour onto an oiled flat surface and allow to cool and set
Whipped Cream:
- Place both into a bowl and whisk until firm but silky
To finish,
- To assemble cut set jelly into squares and place a generous dollop of cream in the centre. Fold one corner to meet the other like a ravioli
We like to finish with a shaving of freeze dried strawberries for that extra strawberry kick or for a more unusual taste, black pepper or Tasmanian native pepper.
