Cheesy Stuffed Capsicums

Please enjoy this specially made Home Style recipe, made with great-tasting Barambah Organics products.


  • 1 large capsicum or 6 baby ones
  • 1 cup of cooked brown rice (or any cooked grain)
  • 1 can of white beans
  • ½ cup chopped coriander
  • ½ cup chopped parsley
  • 1 cup of Barambah Organics Shredded Cheddar
  • 1 cup of Barambah Organics High Protein Cottage Cheese


  1. Place the capsicums under a high grill and grill until they are blackened all over
  2. Remove the capsicums and place them in a bowl. Cover the bowl with cling wrap and allow them to cool. They will steam the capsicums, making it easier to peel them
  3. Preheat oven to 200°C
  4. In a large bowl combine the brown rice, white beans, chopped herbs and Barambah cheeses. Mash it all together (you could alternatively do this in a food processor or blender). Season with salt and pepper
  5. Remove the capsicums from the bowl and carefully peel off their skins (it should come away easily now)
  6. Stuff each capsicum with the rice and bean mixture
  7. Put in a tray and drizzle over olive oil
  8. Bake in the oven for 30 minutes
  9. Serve capsicums topped with some more herbs and Barambah’s Shredded Cheddar
