Crispy Chicken Wings with Herbed Lime Yogurt Sauce

  • 12 chicken wings (allow 3 per serve)
  • 1 Litre Barambah Organic Full Cream Milk
  • 1 brown onion, halved
  • Parsley sprig
  • ¾ cup rice flour
  • 2 tbs sweet paprika
  • sea salt to taste
  • 1 cup Barambah All Natural Yogurt
  • ½ lime juiced
  • ½ cup coriander leaves
  • ¼ cup mint leaves


  1. Preheat the oven grill.
  2. In a large pot place the chicken wings, onion parsley and milk. Add enough water to cover the wings and then bring to a gentle boil. Reduce heat to barely a simmer for 15 minutes then drain the wings. Place on a rack to dry and cool slightly (about 10 mins).
  3. In another large bowl combine the rice flour, paprika and salt. Toss the chicken wings in the mix two at a time and then place on a rack over a baking dish.
  4. Put the wings under the hot grill and cook until browned and crisp – around 5-8 minutes then turn and cook an additional 2-3 minutes.
  5. For the yogurt sauce finely chop the coriander and mint leaves and stir through the yogurt along with the lime juice.
  6. Serve the wings with yogurt sauce to the side along with a simple green salad.
  7. Serves 4
