Zucchini and Feta Fritters

Please enjoy this specially made Home Style recipe, made with great-tasting Barambah Organics products.


  • 1 teaspoon sea salt
  • 1.2kg zucchini, coarsely grated
  • The zest from 1 lemon
  • 1 tub of Barambah’s Feta
  • 100g breadcrumbs
  • 2 eggs, whisked
  • ½ cup flour
  • Chili & coriander for garnishing
  • Salt and pepper
  • 1 cup olive oil, for frying


  1. In a colander, toss the salt through the grated zucchini and allow it to sit for at least an hour (you could even do it the night before and leave it in the fridge)
  2. Squeeze any excess moisture from the zucchini and place it in a bowl together with the lemon zest, Barambah’s Feta, breadcrumbs, eggs, salt and pepper and flour
  3. Mash it all together until combined - it's nice to keep some big feta chunks in the mix
  4. Shape the mixture into small fritters
  5. Heat the olive oil in a shallow pan and add the fritters, frying on all sides until golden
  6. Season with salt and pepper and top with finely sliced chilli, coriander and extra lemon zest.

Serve with a wedge of lemon or try them dipped into the Green Everything Dressing!
